Broccoli might not be the best looking or tastiest vegetable but if cooked well, it can be enjoyed as a beautiful side dish. Traditionally used as an accompaniment alongside your Sunday roast, it is usually steamed and served crispy and green. Full of nutrients, the broccoli is from the cabbage family. Ingredients
2 broccoli
1 carrot
100 g cheddar cheese
3 spoons of white flour
1 tablespoon of yellow mustard
50 g of butter
300 ml whole milk
Method
Chop up your broccoli at the stalk and soak into a bowl of water.
Peel your carrot and cut into chunky batons. Add to your broccoli after it has been drained and leave standing in a bowl.
In a saucepan, add your butter under low heat, and as it starts to melt, add the flour bit by bit until you end up with a doughy ball. Add your milk slowly and whisk gently until you have a nice creamy sauce.
Grate your cheese and add to the sauce. Continue stirring gently.
Add your mustard and stir. Switch off and leave to the side.
Pour the broccoli and carrots into an oven dish. Add the sauce gently and cover your vegetables completely.
Put under the grill and leave for 10 mins until you have a nice golden-brown crust.
Serve with your roast and enjoy this dish, in its sinful cheese sauce!

Nutty Broccoli
Ingredients
2 broccoli
1 handful of pine nuts
1 knob of butter
Method
Chop up your broccoli at the stalk and soak into a bowl of water.
Drain and steam until your broccoli has softened but is still crispy.
Add butter to your pan and tip in your pine nuts. Leave to sizzle for 30 seconds.
Add the steamed broccoli into the pan and stir gently.
Serve as a side dish and enjoy this crispy and nutty dish with fish or meat.
