Creamy Rice Pudding
All you need is a standard cup to measure your ingredients. You’ll need ¾ cup of white rice, 2 cups of milk, 1/3 cup of white sugar, ¼ teaspoon of salt, a beaten egg, 2/3 dry raisins, 1 tablespoon of butter and ½ teaspoon of vanilla extract. Cook your rice in 1 ½ cups of water and let it simmer for 20 minutes whilst stirring often. Add the cooked rice to 1 ½ cups of milk, sugar and salt to a clean saucepan and cook over medium heat for about 15 minutes until it has thickened and reached a creamy consistency. Add the remaining milk, beaten egg and raisins and leave to simmer for another 2 minutes. Keep stirring until you take it off the heat and add in the butter and vanilla essence. Et Voila! Lemon Ice cream cake
This cake is a popular one as it is quick to whip up and has a variety of flavours to tempt anyone with a sweet tooth. You will need 30g of unsalted butter, 8 digestive biscuits, 2 large eggs, 150 g of caster sugar, 300 ml of double cream, 2 lemons and some raspberries. After melting your butter, crush your biscuits and combine before spreading evenly over the base of a chosen dish. Be sure not to press down too hard on it. Whisk the white of your eggs after separating them. Add your sugar and continue to whisk until the mixture is thick and shiny. Now whip the cream and combine the egg yolks and the lemon zest from one lemon and the juice from the other lemon. Add your egg white mixture to the cream mixture and pour over your biscuit base. Place it in the freezer for about 5 hours and serve frozen with scattered raspberries! The best part about this recipe? It can keep for weeks in the freezer, ready to be whipped out anytime you fancy something sweet.
